I've probably made this chicken taco filling 5-6 times since you first posted about it on your blog. I cheat sometimes by using canned roasted tomatoes that have chilis already in them. I'll use any chicken in the house: leftover, or poached on or off the bone. One time I bought an already roasted chicken at the nearby overpriced food emporium. I do add oregano. But the recipe is perfect as-is. Thank you for the sharing, the writing, the honesty and the inspiration.

[...] I used the flights during my book tour as an excuse to read things wholly unrelated to what I’m working on. What a treat: reading for the pure pleasure of it! En route to San Francisco, I read Teddy Wayne’s new novel The Love Song of Jonny Valentine, and found it brilliant as commentary on pop culture, and also surprisingly tender and moving. On my way to the Arkansas Literary Festival, I read James Lasdun’s new memoir about being stalked by a former student, Give Me Everything You Have. (Full disclosure: I am also a former student of Lasdun’s, but not his stalker, I swear). It’s a chilling read, but thought-provoking and beautifully written. And on a brief break from traveling, I got to read galleys of my friend Kate Christensen’s gorgeous, food-filled forthcoming memoir Blue Plate Special. [...]

what a beautiful sentence : " I’ve always felt loneliest in the presence of other people – people I can’t connect with, people I feel unseen by, people who make me feel insincere or uncomfortable. For me, loneliness comes from a sense of missing something. I don’t miss anything when I’m alone."
Indeed.
I do enjoy your blog.

I love reading your blog, Kate! How lucky I am to work with you - and to see that your time at the studio practicing your Pilates with me is part of your motivation to stay in Portland even through kitchen renovations!! I hope to come see the product of all of this investment of time & patience, when it's done. 😊
